5 INGREDIENT ALMOND BUTTER & STRAWBRRY JELLY ENERGY BITES

I think I'm probably the last person to jump on the energy bite train and I'm not sure why! I love having ready-made snacks for the week, especially ones that I can feel good about eating and giving to my family! My toddler took a 3-hour nap in the middle of the day today (WHAAAAT? HOORAY! HALLELUJAH, that means I get uninterrupted time in the kitchen!), so I played around and played around until I came up with the perfect recipe for AB&J bites!
You can totally make these with peanut butter (how YUM would that be), but I made them with almond butter because I've been on an almond butter kick lately!

makes 16 large bites
3/4 packed cup medjool dates (buy them with the seed and come home and remove)
3/4 cup raw almonds
1/2 cup creamy almond butter (lately I'm loving Georgia Grinders brand, but any will do)
1/2 cup gluten free rolled oats
1/4 cup fresh strawberries - OR all fruit strawberry jam
Garnish with chopped up freeze dried strawberries (I used the 365 brand from Whole Foods, though you can also find these at Trader Joe's!)
Get out your Vitamix or food processor. Dump all ingredients in the Vitamix or food processor and pulse several times, until you've got a crumbly texture that looks somewhat sticky (the mixture will stick together once you start forming them into balls). Next, get a small cup of water and keep that nearby. Roll the dough into 2 inch balls. Keep your fingertips wet to prevent sticking. Place balls on a tray or platter. Garnish with freeze dried strawberries. Cover and refrigerate for 20 minutes before serving.
