Vegan / Gluten Free / Paleo


There is nothing - literally nothing - better than a versatile homemade pasta sauce, to throw on top of veggies, pasta, and everything in between. Don't get me wrong, I do grab a jar of high quality pasta sauce when I'm in a pinch, but trust me, make your own!  This recipe is super easy and freezes really well! It's also totally vegan, gluten free, paleo, and Whole30 compliant. Whether you decide to top yours with sausage is up to you, but it's GOOD.



3 tb olive oil

1 chopped onion

1 tb minced garlic

1/4 cup tomato paste

1/4 tsp Italian seasoning (or oregano if you don't have Italian seasoning on hand)

1/4 tsp dried basil

2 cans (28oz) diced tomatoes



Heat the olive oil over medium heat and saute the onion a few minutes until soft, then add the garlic, and stir for another minute. Next add the tomato paste, Italian seasoning (or oregano), and dried basil. Season with salt & pepper to taste. Add the diced tomatoes and stir well. Bring to a boil, and then reduce heat to a simmer and cook for approximately 20 min.
