The New Year is always a time to reflect on the past year and set intentions for the year ahead. For me, my "resolution" is to continue leading a healthy lifestyle and making smart food choices. I know that when I make smart food choices, I feel good. When I feel good, I am happy. When I am happy, I have more of myself to give to others. It's truly that simple, and for me, it all starts with the most important meal of the day: BREAKFAST. 

When it comes to breakfast, I am a creature of habit. My go to is usually a superfood smoothie of some sort. Today I decided to play around with a superfood that I'm not so familiar with, Lucuma, and see what I could come up with. After some trial and error, I came up with the creamiest and most delicious Lucuma Superfood Chia Pudding (seriously). I might be swapping out my smoothies with this pudding for the next week.

serves 2


8 dates, pitted

1 cup almond milk

1/2 tsp vanilla extract

1 tsp Navitas Naturals Lucuma powder

4 tb chia seeds



Soak the dates in the almond milk for 30 minutes. Next, add the lucuma powder and vanilla extract. Then blend well in a food processor or high speed blender (I always use my Vitamix!) until smooth and there are no date chunks. Next, pour the mixture in a bowl and add the chia seeds and mix well. Cover and let sit overnight. In the morning, divide pudding into two servings and top with your favorite berries. I am a strawberry girl, so I chose organic strawberries and freeze dried organic raspberries!  You are gonna LOVE the creaminess!
