Where my beet lovers at? Yes, you, I'm talking to you! I need to be honest with you and tell you that beets weren't always my favorite thing. But as I grew up and my palate changed, BEETS ARE MY JAM! I bake them, roast them, freeze them and toss them in my smoothies, and today I came up with my newest way to enjoy my very own homemade vinaigrette!

If there's one thing you can do for me today, it's to make this beet vinaigrette salad dressing. Because your life will change for the better and that's a guarantee!



1/2 cup cooked beets

2 tb Love Beets beet powder (it's freaking heaven and I use this in my smoothies too!!!). 1 tb is = to 3 medium beets!

1 large shallot. roughly chopped

1.5 tb fresh lemon juice

1/4 cup olive oil

1 tsp dijon mustard

salt & pepper to taste



Take out your high speed blender. Throw all the ingredients in the blender and pulse until nice and smooth. Take out a spoon and take a taste! Add more salt/pepper as needed! Plate your salad, toss with the dressing, and add some of your favorite cheese on top for an extra flavor explosion. In used Kite Hill Foods dairy free ricotta cheese and sprinkled some kale sprouts over a bed of organic romaine lettuce. Simple and so clean!
