CASHEW BEET PESTO

There's something dreamy about a traditional pesto...all that garlic, all that fresh basil. But today I've come up with a non-traditional spin on a traditional pesto, by using BEETS! And CASHEWS! The color is just beautiful and the taste is OUT OF THIS WORLD! It's garlicky goodness that is going to be the talk of the town (trust me, I know what I'm talking about).
1 package pre-cooked beets (I used Love Beets brand)
1/2 cup raw cashews
1/4 cup olive oil
4 cloves fresh garlic
Small handful fresh basil leaves (5-6 leaves)
1/2 tsp salt
1 tsp red wine vinegar
1/2 tsp cumin
Y'all this is the easiest recipe you will ever make. Dump all the ingredients in a food processor (or your high speed blender) and pulse several times until you reach the consistency desired. Do the taste test and adjust seasonings as needed. I like mine a little chunky, so I pulsed maybe 30 times. If you prefer yours creamier, just pulse a few more times. You literally cannot mess this up!
