Hi friends! How many times do you visit someone's blog to get a recipe and then have to read all the blah blah blah to FINALLY get to the recipe? Happens to me all the time. Sigh. Not that there is anything inherently wrong with long blog posts, I just don't have time for that. GIMME THE RECIPE.

So without further delay, I want to introduce you to the very last recipe you will ever need for Overnight Oats. These are CHUNKY MONKEY because it contains banana and dairy free chocolate chips, but you can customize to your liking.

1 cup Bob's Red Mill Gluten Free Rolled Oats

1.5 cups almond milk

2 tb maple syrup

1 tb ground flaxseed

4 tb unsweetened shredded coconut

1 tb dairy free mini chocolate chips (I used Enjoy Life Foods)

1/2 banana, sliced into coins



The instructions are so ridiculously simple, I feel silly even writing them here. All you have to do is grab a bowl, toss in all the ingredients, give it a nice mix, cover and store in the refrigerator overnight. In the morning, put some in a bowl and add your toppings of choice. I added coconut, strawberries, and dark chocolate covered chia seeds (using Salba Chia brand).
