10 MINUTE GRANOLA BARS

Ok ok my friends, if there is ONE thing you need to put on your list to make this weekend, it is these ONE BOWL, super delicious homemade granola bars that take 10 minutes to whip together. I'm not going to write a full blog post on this, because let's face it, y'all just want the recipe - so that's exactly what I'm going to give you. So get to it and ENJOY because these are UNREAL! 

Note: I made these with the addition of drizzling my favorite chocolate bar (EVER!) on top and it took these granola bars to the next level. However it's totally optional and you can use what ever chocolate you like as a drizzle on top, or leave it off all together. Feel free to get creative and add other toppings as well. I like adding goji berries too, for a little superfood action!

 

makes 12 bars

Ingredients

1/4 cup maple syrup

1/4 cup creamy almond butter (I like using an almond butter that doesn't contain any added sugars)

1 cup roasted unsalted almonds

1 1/4 cups gluten free rolled oats (I used Bob's Red Mill)

1 cup medjool dates, packed

1 Hu Kitchen Puffed Almond & Quinoa Bar (for the drizzle)

1 tb coconut oil, melted

 

Instructions

Get out your food processor. Dump all of the ingredients except the chocolate bar and the coconut oil, into your food processor. Pulse several times until you achieve a dough-like consistency. NOTE: do not overdo it, you are aiming for this to be nice and chunky, yet the ingredients well combined. Remember, you are making granola bars! Once done, line an 8x8 baking dish with parchment paper, and fill the pan with your mixture. Use a spatula to press everything down firmly and make even. Next place the dish in the fridge and make the chocolate sauce. In the microwave or on stove top, add the chocolate bar and coconut oil. Stir gently and once combined well, remove dish from the fridge and pour on top. Get fancy and make your drizz pretty! Place back in fridge for at least 15 minutes, then remove and cut into bars. The longer you leave them in before devouring them, the better, because they will get nice and hard like a granola bar, yet retain the chewiness as well! Enjoy!
