CASHEW CRUSTED CHICKEN TENDERS

paleo / whole30/ gluten free

When all your friends are doing the Whole30 and you secretly want in too. CASHEW CRUSTED CHICKEN TENDERS are what’s up. 

 

ingredients

2 lbs Butcher Box chicken tenders
3/4 cup raw cashews
1/2 cup unsweetened shredded coconut
2 eggs, whisked
1/2 cup coconut flour
1/2 tsp salt
2 tb Primal Palate taco seasoning

 

instructions

Preheat oven to 350.
Line baking sheet with parchment paper.
In a blender, add the cashews, coconut, taco seasoning, and salt. pulse until ground, but make sure to leave some texture!
Whisk eggs in a bowl and set aside.
Put coconut flour in a bowl and set aside.
Pour cashew mixture in a bowl and set aside.
Dip each piece of chicken in the 1) coconut flour, then 2) egg, then 3) roll in the cashew mixture. lay flat on baking sheet.
Bake 20-25 minutes until cooked through.

Dip in your favorite sauces! i love Primal Kitchen Foods green goddess dressing, + Sir Kensington's ketchup and ranch dressings (not whole30). The world is your oyster! enjoy these you guys!
