CASHEW CRUSTED CHICKEN TENDERS

Preheat oven to 350.
Line baking sheet with parchment paper.
In a blender, add the cashews, coconut, taco seasoning, and salt. pulse until ground, but make sure to leave some texture!
Whisk eggs in a bowl and set aside.
Put coconut flour in a bowl and set aside.
Pour cashew mixture in a bowl and set aside.
Dip each piece of chicken in the 1) coconut flour, then 2) egg, then 3) roll in the cashew mixture. lay flat on baking sheet.
Bake 20-25 minutes until cooked through.
