Matcha and chocolate are two of my favorite things - combine them into this pudding, and what you've got is the perfect breakfast, treat, dessert, anytime bite that also happens to be vegan, gluten free, paleo, and free of refined sugar.  As if you needed any more reasons to try this, its because matcha is an anti-oxidant powerhouse. It's also a great way to enjoy some natural caffeine without the crash from coffee.

Chocolate Pudding Ingredients

2 tablespoons cacao powder

1 tsp vanilla extract

1 tb maple syrup

2 ripe bananas

pinch of salt


Matcha Chia Pudding Ingredients

1 cup almond milk

1 tsp vanilla extract

1/4 chia seeds

2 tb matcha powder

1 tsp maple syrup



The first step is to make the chocolate pudding, by combining all of the ingredients for the chocolate pudding in a bowl and mixing well. Cover it and place it in the refrigerator overnight. The second step is to make the matcha chia pudding, by blending all of the ingredients in a high speed blender (I love my Vitamix) until nice and smooth. Cover the chia pudding and refrigerate overnight. In the morning, assemble your masterpiece. In a bowl or jar, layer the matcha chia pudding first, followed by the chocolate pudding. Add cacao nibs on top for the perfect indulgence.
