matcha chocolate chip balls by kalejunkie



1 1/2 tb matcha, plus extra for sprinkling on top
2/3 cup fine almond meal (I used Bob's Red Mill because it's nice and fine)
1 cup gluten free rolled oats
1/2 tsp vanilla extract
1/2 cup unsweetened shredded coconut
1/2 cup dairy free chocolate chips (I used Enjoy Life Foods)
10 medjool dates (or 1 cup), pitted, and soaked in hot water for 15 minutes until soft
1 scoop collagen peptides (optional)

Balls, Balls, and more Balls. They are all over Instagram, and secretly I'm tired of seeing them. However, I love (or should I say I am obsessed) with matcha, and during my recipe testing this past weekend for chewy matcha chocolate chip cookies (they flopped), I ended up with the PERFECT matcha chocolate chip balls. So, yep, you are sitting here suffering through yet another post about BALLS. I wish I could provide a money back guarantee with this one, but since I can't, just trust me, be my friend, and make them :)

Soak your dates in a bowl and set aside. Next, in a food processor or blender, add your oats and blend or pulse until fine flour is formed. Add almond meal, coconut, matcha, and collagen (if using), and pulse until just combined. Next, add the dates, and blend until well combined. The "dough" will be sticky. At this point, it's easiest to transfer the mixture to a bowl, and fold in the chocolate chips. Finally, grab a plate. Using your hands, form individual balls with the mixture and place them on the plate. Repeat until all dough is used, and sprinkle with extra matcha powder. ENJOY!
