ONE POT SPICY SAUSAGE & BABY KALE FETTUCCINE

INGREDIENTS

one large shallot
three cloves garlic
1 package of sausage of choice
1 tb Italian seasoning
3 tb avocado oil
2 cups baby kale
juice or one lemon
1 package sliced white mushrooms
crushed red pepper to taste
pasta of choice (I used @capellos fettuccine)

INSTRUCTIONS

Slice shallots, mushrooms, sausage, and set aside.
In a large pot on the stove, boil pasta according to package instructions.
Once pasta is done, rinse and transfer to another bowl.
Using the same pot, place over medium heat and add oil.
Once hot, add the sausage and shallots and garlic (using a garlic masher).
Stir for about 3-4 minutes, then add mushrooms, Italian seasoning and red pepper flakes (if using).
Stir for another 5 minutes and add baby kale and lemon juice.
The kale will slowly wilt.
Add pasta back in the pot and coat everything well!
