PALEO BROWNIE BITES
1/4 cup maple syrup
1/4 cup coconut oil, melted
1/4 cup coconut cream (the thick white part in a can of coconut milk!)
1/2 cup cacao powder (or cocoa powder)
1 tsp vanilla extract
1 scoop collagen peptides (totally optional, but great for skin, hair, joints!)
1/2 cup Enjoy Life Foods dairy free mini chocolate chips
Today I started a Whole30 - which doesn’t really mean anything for you guys, other than when I created this recipe last week, I may have eaten the entire tray at once, because I knew when today came, that I would have to wait 30 days to eat these again! They are so incredibly chocolate-y and delish!
The best part about this recipe is that they are grain-free and gluten-free. So if you have a sensitivity to grains or gluten, you are in the clear with this one. Note, I haven’t tried this with a flax egg, and I suspect that it would NOT work, so if you are okay with eggs, leave the recipe as-is and don’t mess with it. I always like to sneak in some collagen into my baked goods, but it is totally optional!
For this recipe (and many others), I used the dairy free mini chocolate chips from Enjoy Life Foods. I have been a customer of this brand for many years - the quality and taste is unparalleled. I use it to make cookies, muffins, and so much more.

makes 12 brownie bites or 8 larger brownie bites
Preheat oven to 350.
Line a muffin tin with 12 mini muffin liner cups. If you don’t have the mini ones, just use 8 regular sized muffin liner cups.
In a blender, blend the egg, avocado, maple syrup, coconut oil, vanilla extract, cinnamon, and coconut cream. The batter will be super thick. Use a spatula to scrape down the sides if necessary.
Pour the batter into a medium bowl, and add the cacao powder. Mix until well incorporated.
Use a spoon to fill each muffin liner with batter, about 3/4 way full.
Sprinkle mini chocolate chips on top of each one.
Bake for 13-14 minutes, until just set.
Let cool and then EAT and ENJOY! You could add some sea salt flakes on top if you like!
