1/4 cup raisins⠀⠀

1/4 cup coconut oil, melted⠀⠀
3/4 container Simple Mills vanilla frosting⠀⠀

Morning friends!!!! This PALEO CARROT CAKE BANANA BREAD with Vanilla Frosting is what I worked on yesterday, and after a couple rounds and lots of leftovers to give away, I nailed it. It’s most definitely one of THE yummiest things I’ve ever made. I know carrot cakes typically have cream cheese frostings, but since I don’t like cream cheese, I’m not creating a recipe with. And IMO, tastes so much better with vanilla frosting anyway!

INSTRUCTIONS

Preheat oven to 350.
Line a loaf pan with parchment paper and set aside.
In a medium bowl, mash the banana well.
Add the egg and coconut oil, and whisk until well combined and set aside.
In a large bowl, mix together the almond flour, coconut sugar, baking soda, baking powder, apple pie spice (or cinnamon/nutmeg), and salt.
Pour wet ingredients into the bowl with the dry ingredients.
Fold in the carrots and the raisins.
Pour batter into the loaf pan and use a spatula to make even.
Bake for 40-45 minutes, or until a toothpick comes out clean.
Remove from oven and let cool completely before frosting!
Slice and get ready for pure bliss.
