PALEO DOUBLE FUDGE BANANA BREAD

INGREDIENTS

4 eggs
4 large mashed bananas
1/2 cup almond butter
5 tb melted ghee
1/3 cup cacao powder
1/4 cup almond flour
1/4 cup coconut flour
1 tsp baking powder
1 tsp baking soda
1.5 tsp vanilla extract
3/4 cup mini chocolate chips, plus extra for the top (I like Enjoy Life’s chocolate chips)

The best part about working from home these days is that I get to take breaks in the middle of the day to recipe test, and recipe testing is considered MY WORK! Gone are the days in the corporate world, chained to that #desklife. So yesterday I perfected this Paleo Double Fudge Banana Bread recipe and I'm showing it off here. The best part of this is that you can make it in a blender!

 

Makes 1 Loaf

Instructions

Preheat oven to 350. In your blender (YES, your blender), add the mashed bananas, almond butter, and melted ghee. Blend lightly until just combined. Next, add all remaining ingredients and blend again, this time mixing well. Pour batter into an 8 x 4 pan greased with ghee, and TOP THAT ISH with a ton more mini chocolate chips. Bake for 45 minutes. I like mine just a TINY bit undercooked, so I went for 40 minutes. It's up to you. Enjoy!
