PALEO PEPPERMINT PATTIES

I’m thinking these PALEO PEPPERMINT PATTIES might be better than a York Peppermint patty and Junior Mints combined, I may be biased, but coming from the gal that used to bring king size versions of the aforementioned treats to the movie theater, I think you should believe me. To make them you need only five ingredients: coconut butter, peppermint extract, vanilla extract, honey, and your favorite chocolate. SOOOO EASY RIGHT?

 

ingredients

1 cup Artisana Organics coconut butter
2 tb Wedderspoon Official honey 
1/2 tsp peppermint extract 
1/4 tsp vanilla extract
1/2 Hu Kitchen vanilla qrispy chocolate bar (or chocolate of choice)

 

instructions

Slightly melt the coconut butter if it’s hard. I placed mine in the microwave for two 30 second intervals.
Stir in the honey and extracts.
Let refrigerate for 30 min to harden.
Remove from oven and using a spoon or cookie scoop, form patties and place on parchment lined baking sheet. Melt chocolate and drizzle on top!
