PALEO STRAWBERRY FIG NEWTON BARS

INGREDIENTS

FOR THE CRUST:
1 1/2 cups almond flour 
1/4 cup coconut flour
3 tb maple syrup or coconut sugar
1/2 cup apple sauce 
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
pinch sea salt
FOR THE FILLING:
1 1/2 cups dried figs
1 cup fresh strawberries
juice of 1/2 lemon or orange 
1/2 tsp cinnamon 
optional: 2 tb chia seeds

For all of your Sunday baking needs, try my PALEO STRAWBERRY FIG NEWTON BARS! The inspo for this recipe came from Gavyn, my 4 year old. He said he’s tired of mommy making cookies all the time! I mean who gets tired of cookies?!! Is he even my kid? I’m beginning to wonder.

 

INSTRUCTIONS

Preheat oven to 350.
Line an 8x8 baking dish with parchment paper (spray inside with oil first so that the parchment paper sticks). In a food processor or high speed blender, add the filling mixture and pulse/blend until you have a jam-like consistency.
Next, add the crust ingredients to a medium size bowl and mix well.
Place half the mixture into the baking dish and use a spatula to press down evenly.
Pour the filling mixture in and spread evenly.
Top with remaining crust mixture.
Then sprinkle a little cinnamon on top!
Bake for 30 minutes.
Let cool completely and cut into 12 squares.
Store in the fridge.
