Vegan / Gluten Free


If you've been following the health & wellness trends of late, you know that MATCHA is the new "it" thing...matcha lattes, matcha ice cream, matcha freeze from Pressed Juicery, and for good reason. Not only does it taste great (though some people will totally disagree with me), it's packed with antioxidants, is rich in fiber, chlorophyll and vitamins, and it enhances mood and aids in concentration. So sign me up! With #momlife being a real thing and getting very little sleep every night, I will take all the help I can get!

Today I'm sharing with you a new recipe for Pineapple Matcha Muffins that happen to be vegan, gluten-free, and refined sugar free. If you don't think pineapples and matcha go together, you are about to rethink that :)



2 ripe bananas

1/2 cup maple syrup

2 flax eggs (2 tb ground flax, 5 tb water)

2 1/2 cups oat flour

1/2 cup crushed Bare Snacks Chia & Pineapple Coconut Bites, plus more for topping

2 tsp baking powder

1 tsp baking soda

1tsp vanilla extract

2 tb matcha powder



Preheat oven to 350. Line muffin tin with liners. Prepare your flax egg by adding the ground flax and water to a dish and stirring. Let rest for 5 minutes to thicken, and then get started with everything else. In a large mixing bowl, mash the two bananas well. Next, add the oat flour and remaining ingredients. Mix everything well until batter is nice and smooth, being careful not to over mix. Pour batter into muffin cups. Sprinkle chia & pineapple coconut bites on the top of each muffin. Bake for approximately 18 minutes, or until a toothpick comes out clean.
