SESAME TAHINI BANANA BREAD

Gluten Free / Nut Free / Vegan Option

 

It’s no secret I’m on a tahini kick lately. Did you see the Sea Salt Tahini Chocolate Chip Cookies I made a few weeks ago? They are fluffy and thick like pillows, and you guys have been CRUSHING it with all your photos on Instagram. Keep them coming, because I love to repost your creations!

I’m back today with another FAB recipe that you need to try, STAT. The idea for this came to me as I looked around my kitchen staring at three overripe bananas. But, I’m bored of regular banana bread, and I’m obsessed with tahini, so there you have it. 

If you didn’t know, tahini is an excellent source of protein, it’s actually a 20% complete protein, making it a higher protein source than most nuts. It’s also high in unsaturated fats (the good fats!). You can read more about its benefits in the Well & Good article I was quoted in a few months ago. 

Okay, on to the recipe. 

 

Makes one DELISH loaf

Ingredients

3 ripe bananas

1.5 cups gluten free flour (I used Bob’s Red Mill gluten free 1:1 flour)

1/3 cup tahini

1 tsp baking soda

1 tsp baking powder

2 eggs (or flax eggs – mix 2 tb ground flax seed meal + 6 tb water in a bowl and set aside)

¼ tsp cinnamon

¼ tsp salt

½ cup coconut sugar

¼ cup avocado oil (or melted coconut oil)

1 tb white sesame seeds

1 tb black sesame seeds

 

Instructions

Preheat oven to 350. Line a 9 x 5 loaf pan with parchment paper (pro tip, easiest way to get the parchment paper to stick in the pan is to coat it first with a little coconut oil, and then press the paper down inside). If using flax egg, make that in a small bowl, and set it aside for about five minutes, to thicken. Next, in a blender, add the bananas, real eggs (if using), tahini, coconut sugar, avocado oil, and blend on low until the ingredients are just combined. Note, you can also mash the bananas in a bowl first, then add those same ingredients and combine, but I find that the blender gives it a much smoother consistency). 

Pour contents into a medium bowl, and add the flax egg (if using), then add the flour, salt, baking powder, baking soda, cinnamon and sesame seeds. Mix until just combined. Pour batter into the parchment-lined loaf pan, and sprinkle some more sesame seeds on top. Bake for 35-45 minutes. Get ready for your life to be changed! Enjoy!
