WALNUT TAHINI TRUFFLES

INGREDIENTS

1 cup almond flour
3/4 cup tahini
1 tsp cinnamon
1 scoop collagen peptides (optional)
1/2 cup maple syrup
1/2 cup crushed walnuts
1 tb Bare Organics Superfoods Maca Powder
1 cup dairy free chocolate chips
sea salt flakes

One of my favorite superfoods is maca. It’s the only one that I’ve consistently incorporated into my diet—daily—for years now. There are a few reasons for that. 

One, if you’ve been following my journey for any amount of time, I suffered from over a decade-long eating disorder, in which I lost my menstrual cycle...for over 10 years. My doctor recommended maca, as it’s a superfood, well known for its hormone balancing benefits, and so I went out and purchased my first bag of maca, and started adding it to my daily smoothies. 

One of the things that kept me consistently enjoying maca, is the taste! It doesn’t taste like dirt. Instead, I find it to be a malty, almost caramel-like taste, that adds a little something special to my smoothies. 

Over the years I finally got my period back, and although I’m no doctor and cannot make any medical recommendations, I can encourage you to start incorporating maca into your daily life, because you just never know!

And as time went on, I started getting more creative with my maca use—adding it to my baked goods, homemade banana breads, popsicles, and the like!

INSTRUCTIONS

Line a baking sheet or large plate with parchment paper.
With in a medium size bowl, mix together the almond flour, tahini, cinnamon, collagen (if using), maple syrup, maca, and 1/2 cup of the chocolate chips.
Form individual balls and place on the parchment paper.
Freeze for 20 minutes.
Melt remaining 1/2 cup chocolate in the microwave.
Once melted, dip each truffle in the chocolate, or just drizzle chocolate on top (your choice).
Sprinkle with crushed walnuts and sea salt. devour!
I like to store them in the freezer and pop them out when ever the craving hits. enjoy!
