    VEGAN APPLE PIE BARS - INGREDIENTSFOR THE BARS:2 cups gluten free rolled oats1 1/4 cup almond flour1/4 cup maple syrup 1/4 cup coconut oil, melted1/3 cup finely chopped pecans1 tsp sea salt1 tsp vanilla extractFOR THE FILLING:2 cups Pazazz apples (or Honeycrisp) (this is about 3 medium sized apples diced into small pieces)2 tsp cinnamon1/4 cup maple syrup 2 tb arrowroot or cornstarch1 tb coconut oil, melted

    It’s APPLE SEASON, which means that you are going to be seeing a lot of apple recipes here on my feed. This one that you see here is definitely my favorite thus far. It’s taken me a long time and a lot of testing to come up with a recipe that actually holds together like a bar.

    For this particular recipe, I used Pazazz apples, which I was able to find at my local Safeway. If you can’t locate them, then just pick another variety! Pazazz apples are a descendent of the Honeycrisp apple! They are both tart and sweet and have a crunch factor unlike any other apple I’ve tried; which makes it the perfect apple for baking. No one likes soggy apples!

    VEGAN APPLE PIE BARS

    Ingredients

    FOR THE BARS:
    • 2 cups gluten free rolled oats
    • 1 ¼ cup almond flour
    • ¼ cup maple syrup
    • ¼ cup coconut oil, melted
    • ⅓ cup finely chopped pecans
    • 1 tsp sea salt
    • 1 tsp vanilla extract
    FOR THE FILLING:
    • 2 cups Pazazz apples(or Honeycrisp) (this is about 3 medium sized apples diced into small pieces)
    • 2 tsp cinnamon
    • ¼ cup maple syrup
    • 2 tbsp arrowroot or cornstarch
    • 1 tbsp coconut oil, melted

    Instructions 

    1. Preheat oven to 350.
    2. Line 8×8 baking dish with parchment paper.
    3. The first step is to make the base.
    4. In your food processor, blend the oats until they become a flour.
    5. Add the almond flour and sea salt to the blender, followed by the remaining ingredients for the bars.
    6. Reserve 1/2 cup of the mixture (that is going to be your crumble topping!), and press the remaining mixture evenly into the baking dish.
    7. Then, move on to making the apple filling.
    8. In a pan on the stove over low heat, add coconut oil.
    9. Once the oil has melted, add the apples, maple syrup, and cinnamon.
    10. Sauté for about 3-5 minutes.
    11. While the apples are cooking, add the arrowroot/cornstarch to a small bowl, along with 2 tbsp water.
    12. Whisk until there are no clumps.
    13. Then pour it into the apple mixture.
    14. After about 2 minutes, remove from heat, cover, and let sit for about 5 minutes, to allow to thicken.
    15. Pour apple mixture on top of the cookie base.
    16. Sprinkle remaining oat mixture on top.
    17. Bake for 30 minutes.
    18. Let cool completely before slicing into squares so that the bars stay intact!

      Do you have a almond flour substitute? My partner is allergic to nuts so would love to try these and sub out with something nut free. Thanks so much!

        Hi Bianca,
        I’ve just tried it with chick pea flour in place of the almond flour and it’s delicious! I didn’t measure anything though (I’m a lazy baker), so I’m not positive about the amounts needed.

      Omg Nicole! These were amazing!!!! I used butter instead of the coconut oil because I was feeling naughty, but dang these are incredible. The bar dough would make a great base for anything really as it’s so delicious!
